Cordyceps Duck
[Ingredients]10g Cordyceps, 1 old male duck, 15g Shaoxing wine, 5g ginger, 10g scallion whites, 3g white pepper powder, 3g salt

1. After slaughtering the duck, remove all feathers and entrails, chop off the feet and claws, rinse thoroughly, blanch briefly in boiling water, then remove and rinse with cold water. Wash the cordyceps with warm water to remove dirt and sand, and wash and slice the ginger and scallions.
2. Split the cleaned duck head along the neck, insert 8-10 cordyceps into the duck head, and tie it tightly with cotton thread. Put the remaining cordyceps, along with scallions and ginger, into the duck's cavity and place it in a basin. Add clear broth, salt, pepper, and Shaoxing wine to taste, seal the basin tightly with damp cotton paper, and steam for about 1.5 hours until the duck is cooked.
3. After steaming, remove the cotton paper, discard the ginger and scallions, and add MSG.

Dragon Chicken
[Ingredients](7 servings) 10g sea bream, 1 young rooster, 15g shrimp, 20g Shaoxing wine, 3g salt, 3g MSG, 25g scallion segments, 15g ginger segments, 50g cornstarch, 500g clear broth.
[Preparation Method]
1. After slaughtering the chicken, remove the feathers, wash it, chop off the claws, open the abdomen to remove the entrails, wash it again, put it in a pot of boiling water, blanch it briefly, then chop it into small rectangular pieces and put them into 7 bowls (about 125 grams per bowl).
2. Rinse the sea bream and shrimp in warm water, soak for 10 minutes, and place them on top of the chicken. Add scallion segments, ginger slices, half of the seasonings (omit the MSG for now), and an appropriate amount of clear broth. Steam until tender.

[Preparation Method]
1. Soak the deer tail in boiling water for a short time, then rinse it clean. Blanch it in boiling water for 10 minutes, then remove it to remove the hair. If it is not easy to remove the hair, you can blanch it again until it is completely removed.
2. Heat oil in a pot until it reaches 80% of its maximum temperature. Sauté ginger and scallions until fragrant, then add Shaoxing wine and water. Add the deer tail and simmer for 10 minutes, then remove it. In the same pot, heat oil again and sauté ginger and scallions. Add Shaoxing wine, dried tangerine peel, and the deer tail. 3. After cleaning the whole chicken, chop off the claws, cut it in half, blanch it in boiling water, remove it, and remove the large bones. Cut the lean meat and ham into 3 pieces each. Blanch the lean meat briefly in boiling water, remove it, wash it, and put it in a bowl with the ham, mushrooms, and chicken.
4. Wash the ginseng and steam it until soft. Cut it into thin slices and put it in a bowl with the dried tangerine peel. Then cut the deer tail in half and place it on both sides of the chicken.
5. Pour the broth into a pot, add white sugar, bring to a boil, then pour into a bowl. Cover and seal with damp paper towels. Steam for 1.5 hours. Remove from the steamer, open and add a small amount of salt to taste.

[Ingredients](Large portion) 15g wolfberries, 2g black ginseng, 12g pigeon eggs, 5g salt, 30g Shaoxing wine, 3g pepper powder, 1g MSG, 15g soy sauce, 100g lard, 500g peanut oil (75g actually used), appropriate amounts of chicken broth, regular broth, ginger, starch, and scallions.
[Preparation Method]
1. Clean and wash the goji berries and set aside.
2. Soak the sea cucumber in a bowl of cold water until it expands. Remove the inner membrane, blanch it twice in regular broth, rinse it clean, and use the tip of a knife to make diamond-shaped cuts on the abdominal wall, being careful not to cut all the way through. Wash and crush the ginger and scallions, and set aside.
3. Simmer the pigeon eggs over low heat until cooked through. Remove them and place them in cold water. Peel each egg and place them in a bowl. Separately, heat peanut oil in a wok until boiling. Coat the pigeon eggs with dry starch and fry them in the oil until golden brown.
4. Heat a wok and add 50g of lard. When the oil is about 80% hot, add scallions and ginger and stir-fry. Then pour in chicken broth and cook for two or three minutes. Remove the ginger and scallions. [Preparation Method]
1. Boil Eucommia bark in water to make about 50 grams of concentrated juice (add starch, Shaoxing wine, MSG, soy sauce, salt, and white sugar, thicken and divide into 3 portions for later use).
